  • Cheese Scalloped Potatoes And Carrots

    Ingredients

    • 2 c. Water
    • 6 x Potatoes, thinly sliced
    • 2 med Onions, thinly sliced
    • 4 med Carrots, diagonally sliced
    • 3 Tbsp. Margarine
    • 2 Tbsp. Flour
    • 1 tsp Salt
    • 1/8 tsp Pepper
    • 1 1/2 c. Lowfat milk
    • 1 1/2 c. Cheddar, grated

    Directions

    1. Heat oven to 375
    2. Bring water to a boil in frying pan, add in potatoes, onions, and carrots.
    3. Cover and cook 10 min, or possibly till tender. Drain.
    4. In medium saucepan, heat margarine, remove from heat. Stir in flour, salt, pepper. Add in lowfat milk, blending well. Bring to a boil over medium heat, stir till thick and smooth. Stir in cheese, cook over low heat, stir constantly till cheese melts.
    5. Layer half the potatoes, onion, and carrot in a slightly greased 9x13 pan.
    6. Top with half sauce. Repeat. Bake covered 30 min or possibly till potatoes are tender. Remove cover during last 10 min of cooking.
