  • Cheese Manicotti Florentine

    Ingredients

    • 16 x Manicotti Noodles
    • 1 lb Ricotta Cheese or possibly cottage cheese
    • 1/2 lb Mozzarella Cheese
    • 1 c. Parmesan Cheese
    • 2 x Large eggs beaten
    • 1 Tbsp. Minced Parsley
    • 1/2 tsp Salt
    • 1/4 tsp Pepper
    • 1/8 tsp Nutmeg
    • 2 c. Spaghetti Sauce
    • 1 sm Onion
    • 1/2 lb Mushrooms
    • 1/2 lb Spinach

    Directions

    1. Sautee minced onions and mushrooms till tender. Steam minced spinach till wilted (or possibly use thawed frzn spinach). Combine ricotta, mozzarella, 3/4 c. of the Parmesan, Large eggs, parsley, spices. Add in spinach and 3/4 of sautee to mix. Fill uncooked manicotti shells; place filled shells in a single layer in a greased 13x9 baking pan. Add in remaining sautee to spaghetti sauce. Cover manicotti with sauce.
    2. Sprinkle with remaining Parmesan. Bake at 350 F for 35 min.
    3. This is probably my favorite Italian dish.
