Cheddar Meatloaf
Prep: 10 min Cook: 1 hours Servings: 4by Margy Hewes Walstrum9 recipes>There is nothing but ground beef sirloin in this meatloaf. A blending of herbs and Cheddar cheese make it perfect. Remember the meat should be handled lightly and not overworked or the loaf will be too tightly packed. Ingredients
- 1 1/2 lbs. ground sirloin
- 1/2 cup onion, finely chopped
- 1 Tbsp. oil
- 2 eggs, beaten
- 1 - 1 1/2 cup Cheddar cheese, grated
- 1/4 cup bread crumbs
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. dried thyme leaves
- 1/4 tsp. crushed rosemary
- 1 tsp. dried basil leaves
- Bay leaves
Directions
- Place ground sirloin in a large mixing bowl.
- Saute the oinions in oil until softened but not browned.
- Add oinions to meat with the eggs and cheese. Blend lightly with fork.
- In a small bowl, combine the bread crumbs, salt, pepper, thyme, rosemary and basil. Mix lightly into meat mixture with hands or fork until blended.
- Shape meat into an oval loaf. Place loaf in baking dish. Press bay leaves on top.
- Bake at 350 degrees F for 1 hour or until meat temperature reaches 155 degrees F.
- Let sit at room temperture for 10 minutes before slicing.
