    There is nothing but ground beef sirloin in this meatloaf. A blending of herbs and Cheddar cheese make it perfect. Remember the meat should be handled lightly and not overworked or the loaf will be too tightly packed.

    Ingredients

    • 1 1/2 lbs. ground sirloin
    • 1/2 cup onion, finely chopped
    • 1 Tbsp. oil
    • 2 eggs, beaten
    • 1 - 1 1/2 cup Cheddar cheese, grated
    • 1/4 cup bread crumbs
    • 1/2 tsp. salt
    • 1/2 tsp. pepper
    • 1/2 tsp. dried thyme leaves
    • 1/4 tsp. crushed rosemary
    • 1 tsp. dried basil leaves
    • Bay leaves

    Directions

    1. Place ground sirloin in a large mixing bowl.
    2. Saute the oinions in oil until softened but not browned.
    3. Add oinions to meat with the eggs and cheese. Blend lightly with fork.
    4. In a small bowl, combine the bread crumbs, salt, pepper, thyme, rosemary and basil. Mix lightly into meat mixture with hands or fork until blended.
    5. Shape meat into an oval loaf. Place loaf in baking dish. Press bay leaves on top.
    6. Bake at 350 degrees F for 1 hour or until meat temperature reaches 155 degrees F.
    7. Let sit at room temperture for 10 minutes before slicing.
