Charred Sweet Onions And Blue Cheese
Ingredients
- 2 Tbsp. oil
- 1 lrg sweet onion halved, and thinly sliced
- 1 tsp balsamic vinegar
- 1 tsp red wine vinegar
- 2/3 c. crumbled blue cheese Salt to taste Freshly-grnd black pepper to taste
- 1 Tbsp. snipped chives for garnish
Directions
- Heat oil in large heavy skillet over medium-high heat. Add in onion. Cook, stirring occasionally to avoid burning but to allow browning, about 5 to 6 min. Stir in balsamic and red wine vinegars, then blue cheese. Remove from heat.
- Add in salt and pepper to taste. (Can be made 3 days ahead and refrigerated. To serve, let sit out till room temperature or possibly gently hot in microwave oven.) Adjust seasoning. Garnish with chives.
- This topping can be served at room temperature or possibly hot, slightly reheated in the microwave oven. It combines well with Dijon mustard.
- This recipe yields 4 to 8 servings.
