  • Cauliflower and Broccoli Salad

    I have attended many parties and gatherings where fresh broccoli and cauliflower were served as appetizer, along with some creamy sauce or dip. Personally, I am not a fan of raw cauliflower and broccoli (or carrot sticks for that matter.) I usually like these veggies stir-fried or, at the very least, steamed. But when I came across this salad recipe, it made me think twice about my dislike for the raw florets. Perhaps, it is the accompanying unique dressing that made the salad look more appetizing. Oh, okay -- the bacon, too!

    Ingredients

    • 2 cups cauliflower florets
    • 2 cups broccoli florets
    • 1/2 cups celery, chopped
    • 1 cup frozen peas
    • 1/2 cup red bell pepper, sliced into tiny cubes
    • 4-5 pieces of bacon, cooked and crumbled
    • 2 cups mayonnaise
    • 2 tbsps brown sugar
    • 1/4 cup grated Parmesan cheese
    • 1 small onion, chopped
    • 2 tsps white vinegar
    • Salt and pepper to taste.

    Directions

    1. In a large salad bowl, toss cauliflower, broccoli, celery and peas.
    2. In another bowl, combined mayonnaise, cheese, vinegar, onion, and salt and pepper to taste. Mix well.
    3. Pour dressing over the vegetables and sprinkle bacon and bell pepper. Toss some more.
    4. Place salad in the refrigerator to chill before serving.
    5. Save extra dressing, if any, to add to the salad as needed.
