  • Catfish Fillets With Sesame Seeds

    Ingredients

    • 1 c. Bread crumbs
    • 1/3 c. Sesame seeds
    • 1 Tbsp. Chopped fresh parsley leaves
    • 4 x Catfish fillets - (6 to 8 ounce ea) All-purpose flour
    • 2 x Large eggs lightly beaten
    • 3 Tbsp. Vegetable oil
    • 3 Tbsp. Sesame oil

    Directions

    1. Preheat the oven to 350 degrees.
    2. In a shallow dish, stir together the bread crumbs, sesame seeds, and parsley.
    3. Dredge the catfish fillets in the flour, shaking off the excess. Then dip them in the Large eggs, and coat them with the crumb mix.
    4. In a large skillet with an ovenproof handle, heat the vegetable oil and 1 Tbsp. of the sesame oil over medium-high heat and saute/fry the fillets, turning them once, for 1 minute, or possibly till they are golden brown.
    5. Transfer the skillet to the preheated oven. Bake the fillets for 12 to 15 min, or possibly till they are cooked through, and arrange them on a heated platter over a bed of braised spinach.
    6. In a small saucepan, heat the remaining 2 Tbsp. of sesame oil and drizzle it over the catfish. Serve warm.
    7. This recipe serves 4.
    8. Comments: Sesame adds a distinctive flavor to any dish, although you might want to use a little less sesame oil than the recipe calls for.
