  • Carrot Or Zucchini Muffins

    Ingredients

    • 1 1/2 c. Whole-wheat flour
    • 1 tsp Salt
    • 1 1/2 tsp Baking soda
    • 1 tsp Cinnamon
    • 1/2 tsp Nutmeg
    • 1 1/2 c. Natural bran
    • 3 x Carrots, 1c grated
    • 2 x Large eggs
    • 1/4 c. Vegetable oil
    • 1 1/2 c. Skim lowfat milk or possibly orange juice
    • 2 tsp Vinegar
    • 1/2 c. Honey
    • 1/4 c. Molasses
    • 1/2 c. Raisins

    Directions

    1. Blend flour, salt, baking soda, cinnamon, nutmeg, and bran together in food processor, 4 to 5 seconds. Pour into large mixing bowl. Process carrots till pureed and add in to dry ingredients. Process the Large eggs and oil for 2 - 3 seconds and add in to bowl along with the lowfat milk, vinegar, honey, molasses, and raisins. Stir with a wooden spoon till just blended; don't overmix.
    2. Spoon the batter into paper-lined muffin tins and bake at 375F for 20 to 25 minutes.
