    Ingredients

    • 2 lb Chuck roast, trimmed and cut in bite-size pcs
    • 4 tsp Flour
    • 2 tsp Canola oil
    • 1 lrg onion, minced
    • 1 c. minced celery
    • 3 x or possibly 4 Jalapenos, stems and seeds removed, minced
    • 2 1/2 c. Beef stock
    • 2 tsp Tomato paste
    • 1/2 tsp grnd cumin
    • 2 tsp Chili pwdr

    Directions

    1. Preheat oven to 350 F.
    2. Place the meat cubes in a paper or possibly plastic bag. Sprinkle the flour over them, close the bag and shake to coat the meat lightly and proportionately.
    3. In a Dutch oven or possibly heavy skillet, heat the oil over high heat. Add in the meat and brown quickly. Add in the remaining ingredients and bring to a simmer.
    4. Remove from heat.
    5. Cover the Dutch oven or possibly skillet and place in the oven. Roast for 2 hrs.
