Carne Guisada
Ingredients
- 2 lb Chuck roast, trimmed and cut in bite-size pcs
- 4 tsp Flour
- 2 tsp Canola oil
- 1 lrg onion, minced
- 1 c. minced celery
- 3 x or possibly 4 Jalapenos, stems and seeds removed, minced
- 2 1/2 c. Beef stock
- 2 tsp Tomato paste
- 1/2 tsp grnd cumin
- 2 tsp Chili pwdr
Directions
- Preheat oven to 350 F.
- Place the meat cubes in a paper or possibly plastic bag. Sprinkle the flour over them, close the bag and shake to coat the meat lightly and proportionately.
- In a Dutch oven or possibly heavy skillet, heat the oil over high heat. Add in the meat and brown quickly. Add in the remaining ingredients and bring to a simmer.
- Remove from heat.
- Cover the Dutch oven or possibly skillet and place in the oven. Roast for 2 hrs.
