Caribbean Yam Soup (Global Fitness Adventures)
Ingredients
- 2 med Red bell peppers, roasted, seeded and peeled
- 3 med Yams, peeled, sliced and boiled
- 1 tsp Chopped jalapeno pepper
- 4 1/2 c. Low sodium vegetable broth, defatted
- 2 Tbsp. Chopped fresh cilantro
- 1/3 c. Red and yellow bell pepper, small dice
- 2 Tbsp. Minced fresh cilantro, leaves
- 1 Tbsp. Garlic Chili Pepper Sauce, or possibly to taste
Directions
- Combine the ingredients in a blender or possibly food processor and puree till smooth. Pour soup into large saucepan and hot over medium heat. Cook, stirring occasionally, till warmed through. Serve hot.
