  • Caribbean Yam Soup (Global Fitness Adventures)

    Ingredients

    • 2 med Red bell peppers, roasted, seeded and peeled
    • 3 med Yams, peeled, sliced and boiled
    • 1 tsp Chopped jalapeno pepper
    • 4 1/2 c. Low sodium vegetable broth, defatted
    • 2 Tbsp. Chopped fresh cilantro
    • 1/3 c. Red and yellow bell pepper, small dice
    • 2 Tbsp. Minced fresh cilantro, leaves
    • 1 Tbsp. Garlic Chili Pepper Sauce, or possibly to taste

    Directions

    1. Combine the ingredients in a blender or possibly food processor and puree till smooth. Pour soup into large saucepan and hot over medium heat. Cook, stirring occasionally, till warmed through. Serve hot.
