  • Caribbean Pineapple Fritters

    Ingredients

    • 2 c. Fresh pineapple, cut in chunks
    • 1 x Habanero chile pepper, seeded and chopped
    • 5 x Chives, finely chopped
    • 1 x Onion, chopped
    • 2 x Cloves garlic, mashed & chopped
    • 8 x Green onions, chopped
    • 1/2 tsp Turmeric
    • 1 1/4 c. Flour
    • 1/2 c. Lowfat milk, or possibly more
    • 1/2 c. Vegetable oil, for frying
    • 2 x Large eggs, beaten Salt and pepper Pineapple rings, for garnish

    Directions

    1. These 2 are from Diana Rattray, Southern Cuisine, the Mining Co.
    2. Mix first seven ingredients; set aside.
    3. combine flour, lowfat milk, Large eggs, and salt and pepper together and beat well with an electric mixer. Cover and chill for about 4 hrs. After 4 hrs, combine fruit with batter.
    4. Heat the vegetable oil in a deep skillet. Drop batter in by spoonfuls and fry for about 5 min, or possibly till they are golden. Remove fritters and drain on paper towels. Serve cool, garnished with pineapple rings.
    5. Serves 6.
