  • Cardamom Oatmeal Wafers

    Ingredients

    • 1 c. Sifted whole wheat pastry flour
    • 1/2 c. Granulated sugar cane juice or possibly brown sugar
    • 1/2 c. Rolled oats
    • 1 tsp Crushed cardamom seeds or possibly grnd cardamom
    • 1/4 tsp Baking soda
    • 3 Tbsp. Diced chilled unsalted butter or possibly margarine
    • 1 ounce Semi-sweet chocolate, melted for garnish (optional)

    Directions

    1. Cardamom: the flavour is a cross between lemon zest and eucalyptus. Is available at Indian and Middle Eastern grocery stores.
    2. This is a great low-fat snack!!!!
    3. Pre-heat oven to 350 degrees. Spray 8 by 11 inch or possibly 9 by 12 inch baking dish with cooking spray. Combine all ingredients except butter and chocolate in a food processor. Pulse to mix and pulverize oats. Add in butter and process till mix is crumbly. Sprinkle proportionately into pan. With the back of a large spatula or possibly with your fingers, press dough proportionately and firmly into pan. Bake till golden brown, 17-20 min. Cut into 1 1/4 inch squares while warm. Cold in pan on rack. To garnish, drizzle melted chocolate over cookies.
    4. 4 cookies per serving, makes 4-1/2 dozen; per serving: 24 calories, 0.5g
