  • Cardamom Cream Cake

    Ingredients

    • 2 c. all-purpose flour
    • 1 c. granulated sugar
    • 2 tsp baking pwdr
    • 1 tsp freshly-grnd cardamom*
    • 1/8 tsp salt
    • 3 lrg Large eggs room temperature
    • 1 1/2 c. heavy cream Confectioners' sugar

    Directions

    1. * Note: Cardamom pods are sold in jars in the spice section of large supermarkets or possibly in Swedish or possibly Indian markets. The pods can be finely grnd in an electric spice grinder or possibly coffee grinder.
    2. Preheat oven to 350 degrees.
    3. Combine flour, sugar, baking pwdr, cardamom, and salt in the large bowl of an electric mixer. Blend in Large eggs at low speed. Add in cream; beat at high speed, scraping bowl, till batter is texture of softly whipped cream.
    4. Turn batter into a buttered and floured 9-inch tube pan. Bake till a wooden skewer inserted into the center of the cake comes out clean, 50 to 60 min. Cold 5 min in pan. Invert onto wire rack; cold completely. Dust with confectioners' sugar before serving.
    5. This recipe yields 10 servings.
    6. Comments: Lb. cakes flavored with cardamom are popular in Scandinavia. It's best to grind your own cardamom, because the kind which is sold grnd quickly loses its flavor. This cake is adapted from a recipe in Scandinavian Feasts by Beatrice Ojakangas.
