    Caramelized Onion Sausage and Goat Cheese Pizza

    One of my favorite flavors is the taste of caramelized onions. When we decided to do pizzas for August I just knew that one of my pizzas would have to incorporate them! Add some mild Italian sausage and goat cheese and the result is a pizza with a hint of sweetness. Sweet! TIP: I rolled out the dough on a rubber pastry mat then inverted the pizza pan over the top of the circle and flipped the mat/pan over. Voila! The dough was in the pan without a bit of fuss.

    Ingredients

    • 3/4 pound mild Italian sausage, uncased
    • 6 large Vidalia onions, sliced thinly
    • 3 tablespoons olive oil
    • 3 tablespoons margarine
    • 2 teaspoons salt
    • 1 13.8 ounce package of refrigerated pizza crust
    • 2 tablespoons olive oil (for brushing)
    • 4 ounces goat cheese, crumbled

    Directions

    1. Brown the sausage in a large skillet, crumbling. Remove with a slotted spoon and reserve.
    2. In the same skillet add the 3 tablespoons of olive oil and the margarine. When the margarine is melted add the onions and salt.
    3. Stir frequently over medium-high until the onions are caramelized.
    4. Meanwhile roll out your pizza dough to form a 12” circle. Transfer to a pizza pan (see tip above).
    5. Brush with the 2 tablespoons of olive oil.
    6. Top with the caramelized onions, then sausage, then cheese.
    7. Bake at 475 degrees for 25 minutes or until done in the center and crispy on the edges.
