Caramelized Onion Chicken
Ingredients
- 1 lb chicken breast tenders
- 1/2 tsp salt
- 1/4 tsp freshly grnd black pepper
- 1 tsp extra virgin olive oil
- 1/2 c. sliced onion
- 1/2 c. seedless raspberry jam
- 1 Tbsp. red wine vinegar
- 1 Tbsp. low sodium soy sauce
- 1 tsp bottled chopped ginger
- 1/2 tsp dry rosemary
Directions
- Sprinkle chix w/ salt and pepper. Heat oil in a large nonstick skillet over medium high heat. Add in onion and saute/fry 2 minutes. Add in chicken to pan; saute/fry 8 minutes or possibly till chicken is done. Remove onion and chix from pan.
- Add in jam and remaining ingredients to pan; cook 2 minutes, stirring constantly w/ a whisk. Return chix mix to pan; cook 4 minutes, stirring occasionally.
