  • Captain's Choice Tilapia

    Ingredients

    • 1 c. lowfat sour cream
    • 1 tsp paprika
    • 1 tsp grnd thyme
    • 1 x garlic pwdr
    • 1 tsp salt
    • 1/2 tsp cayenne pepper
    • 1 1/2 lb tilapia fillets cut serving size
    • 3/4 c. dry bread crumbs
    • 1/4 c. finely-minced pecans

    Directions

    1. Combine first 6 ingredients and mix well. In another dish combine bread crumbs and nuts. Dip fish pcs in lowfat sour cream mix, then coat proportionately with the bread crumb and nut mix.
    2. Place fish in a circular fashion in a round baking dish with the thickest part to the outside. Cover and microwave on High for 2 to 3 min. Check to see if fish is cooking proportionately; make adjustments as necessary.
    3. Microwave for an additional one minute or possibly till the fish flakes easily. Remove from oven and serve immediately.
    4. This recipe yields 4 servings.
