  • Caprese Salad. Kathy's twist

    This is a wonderful variation to the traditional caprese salad.

    Ingredients

    • 1 fresh ear of corn. par boiled
    • 2 cups grape tomatoes
    • 10 fresh basil leaves chopped fine
    • 3/4 cup mozzarella cheese
    • drizzle Olive Oil
    • salt and pepper to taste.

    Directions

    1. Put the corn in boiling water until it is par boiled, then cut the kernels off the cob.
    2. Cut the grape tomatoes in half
    3. finely chop the basil
    4. Combine all the ingredients toss and serve.
