Caprese Salad. Kathy's twist
This is a wonderful variation to the traditional caprese salad. Ingredients
- 1 fresh ear of corn. par boiled
- 2 cups grape tomatoes
- 10 fresh basil leaves chopped fine
- 3/4 cup mozzarella cheese
- drizzle Olive Oil
- salt and pepper to taste.
Directions
- Put the corn in boiling water until it is par boiled, then cut the kernels off the cob.
- Cut the grape tomatoes in half
- finely chop the basil
- Combine all the ingredients toss and serve.
