    For Claudia since she posted about avocados :0) Found this on the web after going to Cantina Laredo and LOVING their fresh Guac! Enjoy

    Ingredients

    • 3 Haas (small, dark green) ripe avocadoes
    • 1 plum tomato chopped
    • 1/4 piece of a small red onion chopped
    • 1 fresh jalapeno pepper, seeded & chopped
    • Fresh juice of 1 lime
    • 1/4 teas. Sea salt, pepper
    • Fresh Cilantro (about 1 T chopped)
    • sprinkle of garlic powder

    Directions

    1. First squeeze a good amount of fresh lime (about 2 T) into a wooden bowl. Add your sea salt, pepper, garlic powder & mix. Add avocado, jalapeno, tomato, onion, cilantro (reserve a tiny bit of each to garnish middle/top). Serve immediately with warmed tortilla chips. Mmmmm
    2. Notes: Have made this a few times now and made some changes to the original. It originally called for (2) two avocado, my cousin and I decided it needed more and have been using (3) three ever since. I have used (1) one plum tomato or (3) of those little (Campari?) tomatoes. The ones that look like cherry tomatoes but are bigger. They have A LOT of flavor J. Also, original called for ½ jalapeno…I like more and use (1) one whole. Forgot to get one at the store the other night and had to used jar/sliced jalapenos and was fine J. To lazy to make “warm” tortilla chips so mine are straight from the bag. Restaurant style or whole grain (if I am trying to be good). Pretty sure the wooden bowl is not a necessity either. LOL

        Cantina Ladredo, can't forget that restaurant name. Went to one in Branson for a media trip and we were treated to a wonderful "welcome to Branson" Mexican buffet --- yummm!
