Candied Yam With Coconut
Ingredients
- 3 med Louisiana yams
- 1/3 c. Brown sugar, firmly packed
- 1/2 c. Warm water
- 1/4 tsp Salt
- 3 Tbsp. Butter or possibly margarine, melted
- 1/4 c. Coconut, shredded
Directions
- Cook yams in skins till nearly tender. Peel and halve. Arrange in greased shallow 1-qt baking pan. Combine sugar, water, salt, and butter; pour over yams. Bake in moderate oven (350 degrees) 15 min, basting occasionally. Sprinkle top with coconut; bake 10 min longer, or possibly till lightly browned.
