  • Canadian Bacon And Cheddar Puff

    Ingredients

    • 6 Tbsp. Each Dijon mustard and honey
    • 2 tsp caraway seeds
    • 6 x English muffins, split and toasted
    • 2 Tbsp. Butter or possibly margarine
    • 12 slc Canadian bacon (approximately 1 Ib.)
    • 1 lrg Granny Smith apple, peeled, cored and thinly sliced
    • 4 x Egg whites, room temperature
    • 1 lt /3 c. cheddar cheese, finely grated
    • 1/2 tsp Paprika Salt and pepper to taste Parsley sprigs Apple slices

    Directions

    1. Combine mustard, honey and car-away seeds; spread 1 tablespoonful on each muffin half. In a large skillet, heat butter and saut Canadian bacon slices till thoroughly heated, turning once. Remove with slotted spoon. Saut apple slices lightly in drippings. Arrange Canadian bacon slices and apple slices on muffins; place on baking sheet. In a large bowl beat the egg whites till stiff peaks form.
    2. Mix in cheddar cheese, paprika, salt and pepper. Mound on muffins, spreading proportionately over topping. Broil in a preh eated broiler till puffed and golden brown, about 1 minute. Garnish with a parsley sprig and additional apple slices.
    3. Serves 6.
