  • Cajun Fish Stew

    Ingredients

    • 2 x Garlic cloves chopped
    • 1 Tbsp. Minced parsley
    • 2 tsp Salt divided
    • 1 tsp Dry leaf thyme
    • 1 x Bay leaf
    • 1/2 tsp Grnd allspice
    • 1 Tbsp. Oil
    • 2 1/2 lb Fish fillets (such as red snapper or possibly white fish)
    • 2 Tbsp. Butter or possibly margarine
    • 1 c. Minced onion
    • 1/4 c. Minced green pepper
    • 1/8 tsp Powdered saffron
    • 2 can Tomatoes - (16 ounce ea)
    • 1/2 tsp Tabasco pepper sauce
    • 1 pkt Frzn okra - (10 ounce) cut in 1" pcs
    • 1/2 lb Cleaned raw shrimp Warm cooked Rice

    Directions

    1. In medium bowl, combine garlic, parsley, 1 1/2 tsp. salt, thyme, bay leaf, allspice and oil. Mash together till like paste. Spread on fish fillets. Set aside.
    2. In large kettle, heat butter. Add in onion, green pepper and saffron. Cook 5 min. Add in tomatoes, remaining 1/2 tsp. salt and Tabasco pepper sauce; simmer, uncovered, 10 min.
    3. Add in fish, okra and shrimp. Simmer, uncovered, 5 min or possibly till fish flakes easily when pierced with fork. Serve over rice.
    4. This recipe yields 4 servings.
