Cafe Cego's Goulash Soup
Ingredients
- 1/4 c. oil
- 2 Tbsp. chopped garlic
- 4 lrg onions diced
- 1 lb top sirloin beef diced
- 1/4 c. Hungarian paprika
- 1/4 c. Spanish paprika
- 1 can tomato paste - (6 ounce)
- 6 x Roma tomatoes peeled, diced
- 12 c. chicken broth
- 6 x bay leaves
- 1/2 tsp fresh thyme leaves
- 1 lb boiling potatoes peeled, diced Salt to taste Freshly-grnd black pepper to taste
Directions
- Combine oil, garlic and onions in stockpot. Saute/fry till wilted, 10 min. Add in meat and saute/fry over medium-high heat till meat is browned, 10 min.
- Add in Hungarian and Spanish paprikas and stir with wooden spoon till a few shades lighter and fragrant, 5 min. Add in tomato paste. Stir over low heat 1 minute. Add in tomatoes, broth, bay leaves and thyme. Bring to boil over medium heat.
- Reduce heat to low and add in potatoes. Simmer till potatoes are tender and meat is done, 15 to 20 min. Season to taste with salt and pepper.
- This recipe yields 6 to 8 servings.
