Cabbage Casserole
Great dish to serve as a side with anything! There are not a lot of ways to prepare cabbage that makes people ask for 'more'... This is one they will want to lick the dish clean!!! Ingredients
- For the white sauce:
- 1/2 cup margarine
- 1/4 cup self-rising flour
- 2 cups heavy whipping cream
- 1 head cabbage
- 1 cup shredded extra sharp cheddar cheese
- 1 sleeve Waverly Wafer or Captain's Wafer's Crackers...
- Margarine to dot over crackers
Directions
- Melt margarine in the bottom of a heavy pan, stir in the flour until blended...add the cream and stir making a heavy sauce.
- Chop cabbage in your food processor with the blade attachment to a fine confetti size chop... blanch the cabbage for 4 minutes in boiling, salted water, drain...Do not over cook the cabbage as it needs to be crisp for the casserole.
- Mix cooked cabbage with white sauce add salt and pepper to taste.
- Place cabbage mixture in a casserole dish, top with cheese and crackers, dot with butter. Bake in a 375 degree oven for 1 hour..
- This casserole can be made ahead and refrigerated until needed. Just increase cooking time to 1 1/2 hours.
