  • Cabbage Casserole

    Great dish to serve as a side with anything! There are not a lot of ways to prepare cabbage that makes people ask for 'more'... This is one they will want to lick the dish clean!!!

    Ingredients

    • For the white sauce:
    • 1/2 cup margarine
    • 1/4 cup self-rising flour
    • 2 cups heavy whipping cream
    • 1 head cabbage
    • 1 cup shredded extra sharp cheddar cheese
    • 1 sleeve Waverly Wafer or Captain's Wafer's Crackers...
    • Margarine to dot over crackers

    Directions

    1. Melt margarine in the bottom of a heavy pan, stir in the flour until blended...add the cream and stir making a heavy sauce.
    2. Chop cabbage in your food processor with the blade attachment to a fine confetti size chop... blanch the cabbage for 4 minutes in boiling, salted water, drain...Do not over cook the cabbage as it needs to be crisp for the casserole.
    3. Mix cooked cabbage with white sauce add salt and pepper to taste.
    4. Place cabbage mixture in a casserole dish, top with cheese and crackers, dot with butter. Bake in a 375 degree oven for 1 hour..
    5. This casserole can be made ahead and refrigerated until needed. Just increase cooking time to 1 1/2 hours.
