  • Cabbage, Beef And Barley Skillet

    Ingredients

    • 1 lb beef sliced for stir-fry
    • 1 Tbsp. finely-minced garlic
    • 2 x red onions finely minced
    • 4 c. packaged coleslaw mix (half of 16-ounce bag)
    • 3 c. beef broth or possibly bouillon
    • 1 tsp caraway seeds
    • 1/4 tsp freshly-grnd black pepper
    • 1 1/2 c. instant barley

    Directions

    1. Spray a large skillet with nonstick cooking spray and place over medium-high heat. Add in beef and garlic; cook 3 min, or possibly till beef is browned, stirring constantly. Transfer beef to a plate and set aside.
    2. Spray skillet again and add in onion. Cook 1 minute, stirring constantly. Add in coleslaw, broth, caraway seeds, and black pepper. Bring the mix to a boil. Reduce heat to medium-low and stir in barley. Cover and simmer 10 to 12 min, or possibly till barley is tender and liquid is absorbed. Serve immediately.
    3. This recipe yields 6 servings.
    4. Comments: Thanks to instant barley, that cooks up in about 10 min, this one-dish meal can be on the table in less than half an hour. If you cannot find ready-cut beef for stir-fry, slice bracciole or possibly "minute" steaks into 1/2-inch-wide strips instead. You can also substitute lean grnd beef. If you want to use up those caraway seeds, add in them to potato salad, coleslaw, homemade breads and rolls, buttered noodles, and cheese dishes.
