Bucatini with bacon and peas
Cheesy, flavorful pasta with a touch of green. Ingredients
- 400 g bucatini
- Salt
- 50 g bacon (or prosciutto or pancetta), thinly sliced
- 1 tbs olive oil
- 1 onion, finely chopped
- 300 g frozen peas
- 250 g ricotta cheese
- 1/2 cup Grana Padano or Parmesan cheese, grated
- 1/2 tsp salt
- 1/4 tsp black pepper
Directions
- In large pasta pot cook pasta in boiling salted water according to the manufacturer' instructions.
- Meanwhile, in large skillet cook bacon/pancetta/prosciutto over medium heat until browned. Transfer to paper towel.
- In the same skillet heat olive oil and cook onion until tender, 5-8 minutes.
- During last 3 minutes of pasta cooking time, add frozen peas. When pasta is cooked, remove 1 cup pasta cooking water and reserve.
- Drain pasta and peas, return to the same pot,
- Add ricotta, Parmesan, salt, pepper and reserved pasta cooking water to pasta and cheese. Toss and combine.
- Crumble in bacon/prosciutto/pancetta and toss again.
