  • Brownies With Fudge Icing

    Ingredients

    • 2 x (1-oz) squares unsweetened chocolate
    • 1 c. butter
    • 4 lrg Large eggs
    • 2 c. sugar
    • 2 Tbsp. vanilla extract
    • 1/8 tsp salt
    • 1 c. all-purpose flour
    • 1 c. minced pecans Fudge icing (recipe follows)
    • 1/4 c. cocoa
    • 1/4 c. butter
    • 1/4 c. lowfat milk
    • 1 c. sugar
    • 2 tsp vanilla extract

    Directions

    1. Cook chocolate and butter in a heavy saucepan over low heat till melted, stirring occasionally. Remove from heat and cold mix slightly.
    2. Beat Large eggs and net 3 ingredients at medium speed with an electric mixer till thick and pale about 5 min. Fold one-third of chocolate mix into egg mix. Fold remaining chocolate mix, flour and pecans. Pour into a greased and floured 13x9-inch pan.
    3. Bake at 350 for 45 min. Pour hot Fudge Icing over warm brownies. Cold on a wire rack.
    4. Yield: 2 dozen.
    5. Fudge Icing:Bring fist 4 ingredients to a boil over medium heat, whisking con- stantly; boil 1 minute or possibly till sugar dissolves. Add in vanilla and beat 1 minute.
