Broccoli Rice Quiche
Ingredients
- 1 1/2 c. rice, cooked
- 2/3 c. Sharp cheese, grated
- 3 Large eggs, slightly beaten
- Salt to taste
- 1/4 c. lowfat milk or possibly cream
- 3/4 c. fresh mushrooms, sliced
- 1 1/2 c. raw broccoli florets, cut in 1 inch pcs
- 1/8 teaspoon pepper
Directions
- Combine rice, 1/3 c. cheese, 1 egg and salt to taste. Mix well and press firmly into 9-inch pie pan that has been sprayed with non-stick coating. Combine 2 Large eggs, lowfat milk, mushrooms, broccoli, pepper and salt to taste. Mix well. Spoon into crust. Bake at 375 degrees for 20 min. Remove from oven and sprinkle remaining 1/3 c. cheese over quiche. Return to oven and bake 10 min longer. Yields 3 generous servings.
