  • Brennan's Banana Beignets

    Ingredients

    • 3/4 c. Flour
    • 2 Tbsp. Sugar, plus 2 ts
    • 1 tsp Baking pwdr
    • 1/2 c. Lowfat milk, plus 2 Tablespoons
    • 1/4 c. Beer
    • 1 x Egg Oil, for deep frying
    • 4 x Bananas, each quartered crosswise Powdered sugar Mint leaves
    • 1 c. Whipping cream
    • 1/2 c. Sugar
    • 1 1/2 Tbsp. Bourbon

    Directions

    1. BEIGNETS:Mix flour, sugar and baking pwdr in bowl. Add in lowfat milk, beer and egg and stir till smooth.
    2. Heat oil in deep fryer or possibly heavy deep skillet to 375F. Working in batches, dip bananas into batter and then carefully add in to oil. Cook till golden, about 3 min. Drain on paper towels. Pour caramel sauce onto plates. Set bananas atop sauce. Sprinkle with powdered sugar.
    3. Garnish plates with mint leaves and serve.
    4. CARAMEL SAUCE:Bring cream to boil in heavy medium saucepan over high heat. Cook sugar in heavy small saucepan over low heat, swirling pan occasionally, till brown. Gradually stir warm cream into caramel (mix will bubble vigorously). Boil till thickened to sauce consistency, 3 to 5 min.
    5. Add in bourbon. Serve warm. (Sauce can be prepared 1 day ahead. Cover and chill. Rewarm over low heat.)
    6. Makes about 1-1/3 c..
