Breakfast Boost Bananas
Giant healthy banana raisin & pumpkin seed muffins. Ingredients
- 2 c. organic brown rice flour
- 2 c. whole wheat flour
- 1 tsp kosher salt
- 3 Tbsp baking powder
- 2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cardamom
- 1 c. unsalted butter, room temp
- 1 1/4 c. organic sugar, divided
- 4 large eggs
- 1/2 c. honey
- 1 1/3 c. mashed bananas
- orange zest
- 1/2 c. raisins
- 1/2 c. roasted & salted pumpkin seeds
Directions
- Preheat oven to 350 degrees F.
- In a large bowl, whisk together the flours, salt, baking powder, cinnamon, nutmeg, and cardamom. Set aside.
- In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and 1 cup of organic sugar til light and fluffy.
- Beat in the eggs and remaining 1/4 cup of organic sugar. Once all is incorporated, beat in honey.
- Beat only for about a minute and then add in the bananas and orange zest.
- Slowly, beat in the dry mixture.
- Stir in the raisins and pumpkin seeds.
- Spoon into lined muffin pans and bake at 350 degrees F for 23 to 28 minutes. Let cool a bit in the pan before turning out onto wire rack.
