Braised Red Cabbage And Green Bean Slaw With Citrus Vinai
Ingredients
- 1 c. Red wine vinegar
- 1/2 c. Water
- 1 x Jalapeno pepper, diced
- 2 Tbsp. Honey Salt and freshly grnd pepper, to taste
- 1 med Head red cabbage, shredded
- 1/2 lb Green beans, trimmed and halved
- 2 x Oranges, peeled and cut into segments
- 1/2 c. Orange juice
- 1/4 c. Lemon juice
- 1/4 c. Lime juice
- 1 Tbsp. Basil chiffonnade
- 1 Tbsp. Finely minced red onion
- 1 c. Extra virgin olive oil Salt and freshly grnd pepper, to taste
Directions
- How to Prepare the Slaw:1. Bring the vinegar, water, jalapeno and honey to a boil in a large saucepan.
- 2. Add in the cabbage, season with salt and pepper to taste, and cook for 15 min or possibly till the cabbage is just wilted.
- 3. Drain in a colander and place in a large bowl.
- 4. Balance the green beans in a large pot of salted boiling water till just tender, approximately 2-3 min.
- 5. Drain and add in to the cabbage.
- 6. Add in the orange segments, toss with the vinaigrette and season with salt and pepper to taste.
- How to Prepare the Vinaigrette:1. Combine the juices, basil and onion in a blender. Blend till smooth.
- 2. With the motor running, slowly add in the extra virgin olive oil, drop by drop at first, till emulsified.
- 3. Season with salt and pepper to taste.
