  • Braised Beef with Tomatoes and Herbs

    Ingredients

    • 3 pounds Bastrop Cattle Company chuck steak - cut into 1/2 inch cubes
    • Salt & Pepper
    • Cayenne to taste
    • 3 Tbsp. olive oil
    • 1 bay leaf
    • 2 Tbsp. minced garlic
    • 1/4 cup flour
    • 1/2 lb. onions - chopped
    • 1 cup dry red wine
    • 1/2 lb. mushrooms
    • 24 pitted, stuffed green olives (optional)
    • 2 cups roasted tomatoes
    • 1/2 tsp. thyme
    • 1 1/4 cup finely chopped parsley

    Directions

    1. Cut up meat and sprinkle with salt and pepper.
    2. Heat oil in large skillet, add beef and cook, stirring often.
    3. Add garlic, onions and mushrooms and stir.
    4. As onions turn translucent, sprinkle mixture with flour and stir to coat evenly.
    5. Add wine, tomatoes, olives, bay leaf, thyme, cayenne, salt and pepper.
    6. Cover and simmer on low heat for 1 1/2 hours.
    7. Sprinkle with parsley and serve.
