Boysenberry And Apple Sponge
Ingredients
- 1 kg apples, Granny Smith
- 2 c. boysenberries, fresh
- 5 Tbsp. sugar (caster)
- 100 gm butter
- 1/2 c. sugar (caster)
- 3 x Large eggs
- 1 1/2 c. flour, self-raising
- 1 Tbsp. cornflour
- 2 c. vanilla custard
- 1 c. cream
Directions
- Peel, core and slice the apples into a pie dish, add in the boysenberries and sprinkle with sugar.
- To make sponge:Cream butter and sugar till light and fluffy. Add in Large eggs one at a time, adding a little flour with the second egg. Mix in the remaining flour and cornflour.
- Spread sponge mix over fruit. Bake in a moderate warm oven 190C/375F for 30 to 40 min.
- Sprinkle with a little caster sugar and serve warm with cream and custard.
