Borage And Cucumbers In Sour Cream Dressin
Ingredients
- 3 x Long cucumbers Salt
- 1/2 pt Lowfat sour cream
- 2 Tbsp. Rice vinegar
- 1/2 tsp Celery seed
- 1/4 c. Minced scallions
- 1 tsp Sugar Salt and pepper
- 1/4 c. Young borage leaves, finely minced
Directions
- Wash, score and thinly slice cucumbers. Salt lightly and let stand in a colander for 30 min to drain. Rinse and pat dry.
- Mix remaining ingredients, seasoning to taste with salt and pepper. Add in cucumbers and toss lightly. Garnish with borage flowers or possibly chive blossoms.
- Refrigeratefor 1 hour before serving.
