Boneless Turkey Breast
Ingredients
- 1 pkt stuffing cubes - (8 ounce)
- 1/2 cup. warm water
- 2 Tbsp. butter softened
- 1 sm onion minced
- 1 can sliced mushrooms - (4 ounce) liquid removed
- 1/4 cup. sweetened dry cranberries
- 1 pc boneless turkey breast - (3 lbs)
- 1/4 tsp dry basil
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 6 med carrots cut 1" chunks
Directions
- Coat a 3 1/2-qt (or possibly larger) slow cooker with nonstick cooking spray.
- Put the stuffing cubes in the cooker and add in the water, butter, onion, mushrooms, and cranberries; mix well.
- Sprinkle the turkey breast with the basil, salt, and pepper.
- Place the turkey over the stuffing mix, then place the carrots around the turkey.
- Cover and cook on the low setting for 7 to 8 hrs.
- Remove the turkey to a cutting board and slice.
- Place the carrots on a serving platter. Stir the stuffing till thoroughly mixed and allow to sit for 5 min.
- Spoon onto the platter with the carrots and serve with the sliced turkey.
- This recipe yields 4 to 6 servings.
