  • Bobbie Jean's Almond Cherry Cheesecake

    Ingredients

    • 2/3 c. Graham cracker crumbs, about 14 squares
    • 1/4 c. Butter or possibly margarine, melted
    • 1/2 c. Slivered almonds, broken
    • 1/4 c. Sugar
    • 8 ounce Cream cheese, softened
    • 1/4 c. Sugar
    • 2 x Large eggs
    • 1 c. Cherries, maraschino
    • 1 pt Lowfat sour cream
    • 5 Tbsp. Sugar
    • 1/2 tsp Almond extract Slivered almonds Maraschino cherries

    Directions

    1. Mix crust ingredients and press onto bottom and sides of pie pan. Beat cream cheese and sugar till fluffy Fold in Large eggs till creamy and smooth Stir in cherries.
    2. Pour cream cheese mix into crust. Bake at 375* for 20 min. Let pie cold for 10 min.
    3. Mix topping ingredients, except almonds, pour over pie.
    4. Bake pie at 375* for 5 min. Top with slivered almonds. Cold pie 8 hrs or possibly over night before serving.
    5. Top with cherries.
    6. NOTES : Makes 1 9-inch pie.
