  • Blueprint Bean And Grain Salad

    Ingredients

    • 2 c. Cooked beans of choice see * Note
    • 2 c. Cooked grains of choice (rice, pasta, quinoa or possibly cracked wheat)
    • 1 c. Diced crunchy vegetable (celery, fennel, carrots or possibly bell pepper)
    • 1 c. Additional vegetable parboiled if need be (broccoli, green beans, corn)
    • 1/4 c. Finely-diced red onion (or possibly sliced scallions or possibly chives)
    • 1/2 c. Packed minced fresh herbs
    • 1/3 c. Dressing of choice more or possibly less Salt to taste Freshly-grnd black pepper to taste

    Directions

    1. * Note: Bean Cooking Times for 1 c. dry, then soaked Anasazi beans 1 1/2 to 2 hoursAduki beans 1 hourBlack runner beans 1 1/2 to 2 hoursChickpeas 1 1/2 to 2 hoursChristmas limas 1 to 1 1/2 hoursPinto beans 1 1/2 to 2 hoursScarlet runner beans 1 1/2 to 2 hoursSoybeans 2 to 3 hrs
    2. Mix the ingredients together and season with salt and pepper.
    3. This recipe yields 4 servings.
