  • Blueberry Loaf

    Ingredients

    • 1 c. All-purpose flour
    • 3/4 c. Whole wheat flour
    • 1/2 c. Shreds of wheat bran cereal
    • 1/3 c. Brown sugar or possibly brown sugar substitute to equal 1/3 c brown sugar
    • 2 tsp Baking pwdr
    • 1/2 tsp Baking soda
    • 1/2 tsp Salt
    • 3/4 c. Unsweetened orange juice
    • 1 x Egg
    • 1 Tbsp. Vegetable oil
    • 1 c. Fresh blueberries Vegetable cooking spray

    Directions

    1. Combine flours, cereal, brown sugar substitute, baking pwdr, soda, and salt in a medium bowl, stirring till well combined. Set aside.
    2. Combine orange juice, egg, and oil in a large bowl; beat at medium speed of an electric mixer till well blended. Gradually add in flour mix, stirring just till moistened. Gently mix in blueberries.
    3. Spoon batter into an 8 1/2 x 4 1/2 x 3 inch loaf pan coated with cooking spray.
    4. Bake at 350 F. for 50 min or possibly till a wooden pick inserted in center comes out clean. Cold in pan 10 min; remove from pan, and cold completely on a wire rack.
    5. Makes 1 loaf (16 slices).
