Blueberry Fool
Quick and easy make-ahead dessert for the family Ingredients
- 300g fresh or frozen blueberries
- 1 lemon
- 200ml plain yogurt
- 150ml double cream
- 2 tablespoons caster sugar
- 1 teaspoon vanilla essence
Directions
- RINSE - Place the blueberries in a colander and rinse under running water. Reserve a few for decoration.
- SOFTEN - Put the berries in a pan and add the sugar and lemon juice. Heat gently for about 8-10 minutes until the fruit is soft.
- CRUSH - Crush the berries with a fork to make a compote. Leave to cool.
- WHIP - Meanwhile, whip the cream to soft peaks. Fold it into the yogurt. Stir in two thirds of the blueberry compote then lightly fold in the remaining compote.
- CHILL - Divide the mixture into 4 individual glasses and top with the reserved blueberries. Chill until ready to serve.
