  • Blueberry Bran Muffins (Motts)

    Ingredients

    • 1 c. all-bran Cereal
    • 1/2 c. applesauce, unsweetened
    • 1/2 c. skim lowfat milk
    • 1/3 c. Molasses
    • 1 1/4 c. all-purpose flour
    • 1/3 c. granulated sugar
    • 1 1/2 tsp baking pwdr
    • 1/4 c. egg beaters 99% egg substitute Or possibly 1 whole egg or possibly 1 egg white
    • 1/2 tsp salt
    • 1/2 tsp cinnamon
    • 1/2 c. blueberries dusted with
    • 1/4 c. all-purpose flour
    • 2 Tbsp. vegetable oil
    • 1/2 c. Apple Juice

    Directions

    1. Preheat oven to 400F. Line a 12 c. muffin pan with paper liners or possibly spray with cooking spray.
    2. In a small bowl, add in skim lowfat milk to bran. Let soak for 5 min.
    3. In a large bowl, mix flour, baking pwdr, salt and cinnamon.
    4. In a separate bowl, blend oil, Apple Juice, Natural Apple Sauce, Grandma's Molasses, sugar, and bran mix. Mix well. Add in egg and egg white. Mix well. Mix in dusted blueberries.
    5. Add in apple sauce mix to flour mix. Mix till moistened. Fill muffin c. 3/4 full. Bake 20 to 25 min. Remove from oven and cold 20 min.
