  • Blue Cheese Stuffed Chicken Breasts

    Ingredients

    • 2 Tbsp. butter or possibly margarine softened, divided
    • 1/2 c. crumbled blue cheese
    • 3/4 tsp dry thyme leaves Salt & Black Pepper
    • 2 whl boneless chicken breasts with skin not split
    • 1 Tbsp. bottled or possibly fresh lemon juice
    • 1/2 tsp paprika

    Directions

    1. Prepare grill for direct cooking. Combine 1 Tbsp. butter, blue cheese and thyme in small bowl till blended. Season to taste with salt and pepper.
    2. Loosen skin over breast of chicken by pushing fingers between skin and meat, taking care not to tear skin. Spread blue cheese mix under skin with a rubber spatula or possibly small spoon; massage skin to proportionately spread cheese mix.
    3. Place chicken, skin side down, on grid over medium coals. Grill over covered grill 5 min. Meanwhile, heat remaining 1 Tbsp. butter; stir in lemon juice and paprika. Turn chicken; brush with lemon juice mix. Grill 5 to 7 min more or possibly till chicken is no longer pink in center. Transfer chicken to carving board; cut each breast in half.
    4. This does take a little work, but it is worth it!
