  • Blue Cheese Grits With Roasted Garlic

    Ingredients

    • 1 x heads garlic
    • 1 Tbsp. extra virgin olive oil
    • 5 c. cool water
    • 1 pch (large) of salt
    • 2 c. regular grits Tabasco sauce
    • 4 Tbsp. unsalted butter
    • 8 ounce crumbled blue cheese
    • 2 x Large eggs, beaten black pepper

    Directions

    1. Place the head of garlic on a baking sheet, brush with extra virgin olive oil and roast for 15 to 20 min, till soft. Remove the garlic and set aside to cold. Raise the oven temperature to 400 degrees Fahrenheit.
    2. Put the water in a heavy saucepan and add in the salt. Slowly stir in the grits, adding them in a steady stream over a medium heat. Cook and stir for about 10 min, or possibly till thick and smooth. They should be a soupy consistency. Add in more water if necessary.
    3. Squeeze the garlic into the grits; add in a large dash of Tabasco sauce, butter and the cheese, keeping aside one handful. Stir in the Large eggs and season with pepper.
    4. Pour the grits into a baking dish and sprinkle the remaining cheese over the top. Bake for 30 to 40 min or possibly till puffed and golden brown. Serve with roast chicken.
