  • Blackberry Banana Muffins

    Ingredients

    • 2 c. Flour
    • 1/2 tsp Baking pwdr
    • 3/4 tsp Baking soda
    • 1/4 tsp Salt
    • 1/4 lb Butter
    • 1 c. Sugar
    • 2 x Large eggs
    • 3 x Overripe bananas
    • 1/4 c. Lowfat sour cream
    • 1 tsp Vanilla
    • 1 pt Cleaned Blackberries
    • 1/2 c. Minced toasted almonds

    Directions

    1. Sift together flour, baking pwdr, baking soda, and salt. Cream butter with sugar till fluffy. Beat in Large eggs. Puree bananas, lowfat sour cream and vanilla. Alternate add in dry ingredients in 3 additions and banana mix in 2 additions to the egg mix. Beat sufficient to incorporate. Mix in Blackberries and toasted almonds. Spoon into greased muffin tins and bake in a preheated 350 deg F oven for about 25 min, till puffed, browned and springy.
    2. Makes about 15 muffins.
