  • Black Pepper Chicken

    This is a delicious recipe that is easy to make but may be spicy for children. It could also be a remedy for cold as it has lots of black pepper!

    Ingredients

    • 1.2 kg chicken - cut into pieces
    • 4 - 5 tsp black peppercorns - roast
    • 2 tsp coriander seeds - roast
    • 1 tsp cumin seed - roast
    • 3 cloves garlic and 3 inch ginger - crushed in mortar and pestle
    • Salt
    • 2 dried red chillies
    • 8-10 curry leaves
    • 3 - 4 cloves
    • 1 big onion - sliced
    • 1/2 tomato - sliced
    • Coriander leaves for garnish

    Directions

    1. Grind the roasted items. Add this including salt and the ginger garlic into the chicken and marinade overnight or for a few hours.
    2. Heat oil in a wok and fry the cloves, curry leaves, dry red chillies, onions and tomatoes.
    3. Then add the chicken with some water to cook.
    4. Taste if required more salt and black pepper (adjust according to your taste bud).
    5. Once the chicken is done, garnish with coriander leaves.
    6. Serve hot with rice or chapati/appam/bread.
