Black Pepper Chicken

- 1.2 kg chicken - cut into pieces
- 4 - 5 tsp black peppercorns - roast
- 2 tsp coriander seeds - roast
- 1 tsp cumin seed - roast
- 3 cloves garlic and 3 inch ginger - crushed in mortar and pestle
- Salt
- 2 dried red chillies
- 8-10 curry leaves
- 3 - 4 cloves
- 1 big onion - sliced
- 1/2 tomato - sliced
- Coriander leaves for garnish
Directions
- Grind the roasted items. Add this including salt and the ginger garlic into the chicken and marinade overnight or for a few hours.
- Heat oil in a wok and fry the cloves, curry leaves, dry red chillies, onions and tomatoes.
- Then add the chicken with some water to cook.
- Taste if required more salt and black pepper (adjust according to your taste bud).
- Once the chicken is done, garnish with coriander leaves.
- Serve hot with rice or chapati/appam/bread.
