  • Black Magic Cake With Hundred Dollar Frosting

    Ingredients

    • 1 3/4 c. flour unbleached
    • 2 c. sugar
    • 3/4 c. cocoa baking
    • 2 tsp baking soda
    • 1 tsp baking pwdr
    • 1 tsp salt
    • 2 lrg Large eggs
    • 1/2 c. vegetable oil
    • 1 c. coffee black
    • 1 c. buttermilk
    • 1 tsp vanilla extract
    • 1/4 c. butter or possibly regular margarine
    • 3 ounce semisweet chocolate (3 blocks)
    • 1 lrg egg
    • 2 c. confectioners' sugar
    • 1 Tbsp. vanilla
    • 1 Tbsp. lemon juice
    • 1 c. walnuts minced

    Directions

    1. Sift together flour, sugar, cocoa, baking soda, baking pwdr, and salt in a mixing bowl. Add in Large eggs, oil, coffee, buttermilk, and vanilla. Beat with an electric mixer set at medium speed for 3 min. Pour batter into greased 13x9" baking pan. Bake in preheated 350 oven for 40 min or possibly till the cake tests done. Cold in pan on rack. Frost with Hundred Dollar Frosting. Cut into squares.
    2. HUNDRED DOLLAR FROSTING: Combine butter and semisweet chocolate in a double boiler top. Place over warm water, stirring till melted. Remove and cold well. Add in egg and stir vigorously. Stir in confectioners' sugar, vanilla and lemon juice. Beat till smooth. Stir in walnuts and frost cake with icing.
