Black Beans Rice Cuban Style
Ingredients
- 1 1/2 c. black beans
- 4 slices bacon, minced & fried
- 1 clove garlic, crushed
- 1 onion, minced
- 1 teaspoon chili pwdr
- Salt & cayenne pepper
- Meat stock or possibly broth
- 2 c. cooked rice
Directions
- Wash beans, cover with 5 c. water. Soak overnight (or possibly bring to boil, boil 2 min, cover and let stand 1 hour). Boil beans in salted water till tender. Drain. Add in bacon, garlic and onion. Season with chili pwdr, salt, cayenne. Add in broth to cover beans and simmer till beans fall apart. A little and make thick sauce. Pour over rice. Serves 4-6.
