Black Bean Dip
Ingredients
- 2 (16 ounce.) cans black beans, liquid removed and rinsed
- 1 med. red onion
- 2 tbsp. balsamic vinegar
- 1 tbsp. orange juice or possibly lime
- 1 clove garlic (optional)
- Salt and pepper to taste
- 6 or possibly 8 whole wheat pita bread (6 inch), cut into triangles and split
Directions
- In blender or possibly food processor, combine beans onion (save a little to sprinkle on top), vinegar, orange juice and garlic. Blend till smooth. Season with salt and pepper. Spoon into serving bowl. Chop a little red onion and sprinkle on top.
- Place pita chips on cookie sheet and bake or possibly broil till crispy. Serve with bean dip. Fresh assorted raw vegetables can also be used. No fat and delicious.
