Black Bean, Corn And Tomato Salad
Ingredients
- 1 lb cooked black beans
- 3 lrg tomatoes minced
- 2 lrg bell peppers minced
- 4 x scallions minced
- 2 c. corn kernels
- 1/3 c. red wine vinegar
- 1/2 c. extra virgin olive oil
- 1 1/2 tsp grnd cumin salt and pepper to taste
- 1/4 c. minced cilantro
Directions
- In a large bowl, combine 1 lb. black beans, cooked (about 6 c.), 3 minced large tomatoes, 2 minced large bell peppers (preferably 1 red, I green), 4 minced scallions, 2 c. corn kernels, 1/3 c. red wine vinegar, 1/2 c. extra virgin olive oil, and 11/2 tsp. grnd cumin. Season with salt and freshly grnd pepper to taste. Stir in 1/4 c. minced cilantro, if you have it. Serve at room temperature or possibly slightly chilled.
- Makes 12 servings.
