Black Bean Chili With Pork
Ingredients
- 1 lb boneless pork cut into 1/2" cubes
- 2 x 16 ounce. cans black beans liquid removed
- 1 x red or possibly yellow bell pepper minced
- 1 med tomato minced
- 1 sm red onion thinly sliced
- 1 x clove garlic crushed
- 1/2 tsp grnd cumin
- 2 tsp chili pwdr
- 1/2 tsp salt
- 1 x 8 ounce. can tomato sauce
- 1/2 c. lowfat sour cream or possibly plain yogurt
- 2 Tbsp. minced cilantro
Directions
- In a slow cooker, stir together pork, beans, bell pepper, tomato, onion, garlic, cumin, chili pwdr, salt, and tomato sauce. Cover and cook on Low 8 to 9 hrs. Spoon into individual bowls; top with lowfat sour cream and cilantro.
