Black Bean & Avocado Soup
Delicious is all I can say! Ingredients
- 2-cans-15.5 ounces each: Drained Black Beans
- 1-1/2 cup vegetable stock (low sodium)
- 1/4 cup light cream
- one ripe avocado, chunked, garnish
- one scallion, cut on the bias, garnish
- one tablespoon cumin
- one teaspoon garlic powder
- Chopped cilantro
- one teaspoon black pepper
Directions
- In a food processor add black beans, cilantro, cream and process on high one-two minutes, transfer to a soup pot with a lid
- Add vegetables stock and stir well to combine, add seasonings, stir again, cook on medium heat 15 minutes, stir during cooking time.
- Ladle into soup bowls, garnish with scallions and avocado.
- Delicious!
