  • Black Angus Burger With Cheese And Grilled Green Chiles

    Ingredients

    • 2 lb Grnd Angus beef
    • 3 x Grilled poblano peppers seeded, and sliced into thirds
    • 6 slc Yellow cheddar cheese
    • 6 x Hamburger rolls Baby red-oak lettuce Pickled red onions Poblano Pepper Vinaigrette see * Note Salt to taste Freshly-grnd black pepper to taste

    Directions

    1. Prepare a wood or possibly charcoal fire and let it burn down to embers.
    2. In a large mixing bowl season Angus beef with salt and pepper. Chill till ready to use.
    3. When ready to use, form into 1-inch thick disks. Grill for five min on each side for medium-rare. During the last five min top with cheddar cheese. When finished grilling, on one half of the roll place the burger and top with baby red-oak lettuce, poblano peppers, vinaigrette and pickled red onions. Serve immediately.
    4. This recipe yields 6 burgers.
