Betty Carter's Quick Corn Bread
Ingredients
- 1 Tbsp. Butter
- 3/4 c. Cornmeal,yellow or possibly white
- 1/2 tsp Salt
- 1/2 tsp Baking soda
- 1 x Egg
- 1 1/2 c. Buttermilk
Directions
- 1. Preheat oven to 400'F.
- 2. Place the butter in a heavy 4-c. baking dish and place in preheated oven.
- 3. Combine cornmeal, salt, and soda. Beat egg till blended and stir onto buttermilk. Pour over dry ingredients and stir only till blended.
- 4. Remove pan from oven and tilt to distribute butter proportionately. Pour batter immediately into warm pan and return to heated oven and bake till hard and lightly browned, 20-25 min.
- 5. Serve warm with lots of soft butter and jam.
